Three Types of Rice, Three Different Profiles
White, brown and black rice all provide carbohydrate, but processing and variety affect their fiber, texture, cooking time and plant compounds.
White Rice
White rice has the bran and germ removed, giving it a softer texture and longer shelf life. Enriched white rice may have certain B vitamins and iron added back after milling.
Brown Rice
Brown rice retains the bran and germ, so it generally provides more fiber than white rice and has a chewier texture and nuttier flavor.
Black Rice
Black rice is a pigmented whole-grain variety. Its dark color comes from anthocyanins, the same broad family of pigments found in foods such as blueberries.
Which Should You Choose?
There is no single rice that fits every meal. Choose based on taste, texture, nutrition goals and the dish you are preparing. Variety can be a practical approach.
